All walking holidays in Spain should include Andalucia, the country’s largest province. It’s only a few miles from Morocco and harbours many characteristics from its Moorish history. Rolling plains planted with sunflowers, olives and wheat stretch to the distant mountains and beyond the southern sierras, while long fertile valleys add to the varied scenery. Based near Algamitas, Cortijo Rosario boasts views as far as Seville, Cadiz and Malaga provinces and is ideal for walking holidays in Andalucia. This beautiful renovated farmhouse sits in the heart of an agricultural community where life goes on much as it has for generations.
Our walks take us through rugged hills, white villages, olive groves and the granite peaks of Sierra de Grazalema Natural Park, and a whole day is reserved for Seville. Look out for special weeks where you can learn or practice yoga in the idyllic Andalucian setting.

LEARN TO COOK SPANISH STYLE!
Learn how to prepare the signature dishes of Spain on selected departures (14th April until the 7th July).
The Cortijo Rosario catering team will demonstrate how a true paella is made with the tricks you don't normally get from recipe books.
Paella varies in its ingredients in different regions of Spain - this is the andaluz version using long grain rice - and Maria (our queen of the kitchen) will share her secrets!
She will also prepare Gazpacho, a typical cold summer soup that originates from Andalucía.
And what could be the only thing to drink with these two dishes? Sangria, of course! Rocio will demonstrate the Cortijo version (there are many!) showing you how it is made.
Once all is finished you will sit on the terrace to eat and appreciate why these dishes are so popular.
To help you remember how all is done you will receive a free 'Cortijo Cookery' book as a memento. As well as lots of recipes it has pages of photos and information about the most famous parts of Andalucía.
